Christmas Stocking Squash

Ingredients:

  • Nojo Tahini Dressing 
  • 1 medium butternut squash
  • 125g cooked quinoa 
  • 1 small red onion, chopped 
  • 1 small garlic clove, chopped
  • 1 spring onion, finely chopped 
  • 1 heaped tbsp pomegranate seeds
  • A couple mint leaves, finely chopped
  • 1 heaped tbsp almond flakes
  • Salt
  • 1/2 tsp tagine seasoning (optional) 

Method:

  1. Cut, deseed and roast the butternut squash in the oven until lightly toasted
  2. Sweat the aromatics in a pan 
  3. Add & mix the quinoa, salt and tagine seasoning to the pan 
  4. Remove from stove and add the pomegranate, almond flakes and mint leaves
  5. Stuff the roasted butternut squash and broil in the oven on medium heat for 10 mins
  6. Generously drizzle the Nojo Tahini dressing over the squash 
  7. Serve & Enjoy!

This would make a wonderful plant-based main course for Christmas Day!
