Ingredients:
- Nojo Tahini Dressing
- 1 medium butternut squash
- 125g cooked quinoa
- 1 small red onion, chopped
- 1 small garlic clove, chopped
- 1 spring onion, finely chopped
- 1 heaped tbsp pomegranate seeds
- A couple mint leaves, finely chopped
- 1 heaped tbsp almond flakes
- Salt
- 1/2 tsp tagine seasoning (optional)
Method:
- Cut, deseed and roast the butternut squash in the oven until lightly toasted
- Sweat the aromatics in a pan
- Add & mix the quinoa, salt and tagine seasoning to the pan
- Remove from stove and add the pomegranate, almond flakes and mint leaves
- Stuff the roasted butternut squash and broil in the oven on medium heat for 10 mins
- Generously drizzle the Nojo Tahini dressing over the squash
- Serve & Enjoy!
This would make a wonderful plant-based main course for Christmas Day!
